Cách nấu bún bò Huế đậm đà, chuẩn vị Cố Đô
Nguyên liệu cần chuẩn bị
  • Bắp bò: 600gr
  • Chân giò lợn: 800gr
  • Xương ống: 1kg
  • Tiết (dùng tiết bò hoặc lợn): 100gr
  • Mắm ruốc: 3 thìa canh
  • Sả: 6 cây
  • Gừng: 50gr
  • Hành tím, tỏi
  • Rau sống: giá đỗ, hành lá, mùi tàu, hoa chuối,…( nên chuẩn bị theo sở thích)
  • Chả Huế: 200gr
  • Bún sợi to
  • Gia vị: muối, đường, bột ngọt,…
  • Chỉ sợi to (sử dụng để buộc bắp bò và chân giò lợn)

Nguyên liệu cho phần ớt sa tế:

  • Ớt bột: 1 thìa canh
  • Muối, đường, dầu ăn
  • 1 quả ớt tươi, 1 củ tỏi, 1/4 quả dứa, 1 cây xả: đều băm nhuyễn

Chú ý:

– Chân giò lợn bạn nên chọn phần chân trước sẽ ngon hơn.

– Nếu như bạn không tìm mua được chả Huế có thể thay bằng chả lụa.

– Và bạn có thể dùng bún sợi thường thay thế bún sợi to.

Các bước thực hiện

Bước 1: Sơ chế nguyên liệu

  • Gừng bạn đem cạo vỏ, rửa sạch đập dập
  • Sả bóc vỏ, rửa sạch. Một nửa bạn băm nhuyễn, còn lại đem cắt khúc rồi đập dập.
  • Hành tím, tỏi bóc, rửa qua vỏ rồi băm nhỏ.
  • Rau sống nhặt, ngâm với chút muối rồi rửa sạch để ráo nước.
  • Chân giò lợn sau khi mua về, bạn lọc bỏ xương, rửa sạch rồi lấy chỉ buộc cuộn lại.
  • Phần bắp bò bạn cũng rửa sạch rồi dùng chỉ buộc chặt.
  • Xương ống rửa sạch, sau đó chặt làm 2 hoặc 3 khúc

Bước 2: Ướp thịt

  • Đặt nồi nước lên bếp đun sôi, rồi chần sơ qua xương, bắp bò và chân giò lợn.
  • Kế đến, lấy ½ bát con nước pha với mắm ruốc, dùng đũa khuấy đều.
  • Tiếp theo, ướp các loại thịt cùng gia vị: 1 thìa canh muối, 1 thìa canh mắm ruốc vừa pha loãng, ½ thìa canh bột ngọt, 2 thìa canh đường, 1 thìa canh hành tím băm, 1 thìa canh tỏi băm và 1 thìa canh sả băm.
  • Trong khi đợi thịt ngấm gia vị thì bắc nồi, đun sôi nước rồi cho tiết vào luộc. Sau khi nguội thì đem thái thành miếng vuông.

Bước 3: Hầm thịt và xương

  • Bạn cho sả và gừng lót ở đáy nồi, kế đến đổ nước rồi cho xương ống và chân giò lợn vào luộc chín. Sau đó bạn đem vớt chân giò lợn ra một bát nước lạnh để thịt không bị bở.
  • Tiếp theo, bạn cho sả và gừng vào một nồi khác, đổ nước và cho bắp bò vào luộc chín. Sau khi bắp bò chín cũng vớt ra bát nước lạnh cho thịt săn chắc.

Bước 4: Nấu nước dùng

  • Đổ chung nước hầm thịt chân giò lợn với bắp bò và phần xương ống vào một nồi lớn, có thể cho thêm nước vào nếu thấy ít.
  • Đun sôi nước rồi thả sả cắt khúc vào nồi, sau đó nêm gia vị theo công thức: 2 thìa canh muối, 2 thìa canh đường, 2 thìa cà phê bột ngọt và phần mắm ruốc còn lại vào. Đun thêm khoảng 30 phút rồi tắt bếp chuyển sang bước tiếp theo.

Bước 5: Làm ớt sa tế

– Đặt chảo dầu lên bếp sau đó cho tỏi và sả vào phi thơm, tiếp tục cho dứa đã thái vào đảo đều tay.

– Đun trong khoảng 5 phút thì nêm 1 thìa café đường và 1 thìa café muối. Cuối cùng cho ớt bột và ớt tươi vào rồi Đảo đến khi hỗn hợp sánh đặc lại là được.
