Nguyên Liệu:

  • 200gr thịt heo xay
  • 50gr giò sống
  • 4 lòng đỏ trứng vịt muối
  • Bún tàu, cà chua, nấm mèo
  • Hành lá, ớt, hành phi, tỏi băm, hành tím băm
  • Gia vị: Dầu ăn, hạt nêm, đường, nước mắm, tương ớt, tiêu, muối, tương cà

Mẹo Hay:

  • Chọn thịt heo xay có màu đỏ tươi, không mùi hôi lạ.
  • Chọn cà chua đỏ tươi, cuốn còn xanh và không bị úng hay chảy nước.
  • Mua lòng đỏ trứng muối từ thương hiệu uy tín.

Cách Làm:

Bước 1: Sơ Chế Nguyên Liệu

  • Ngâm bún tàu nở với nước ấm, sau đó vớt ra và băm nhỏ.
  • Ngâm nấm mèo với nước có muối để khử mùi hôi, rửa sạch và băm nhỏ.
  • Cắt cà chua thành đôi và hạt lựu. Rửa sạch và cắt nhỏ hành lá, ớt.

Bước 2: Ướp Thịt

  • Trong tô, trộn thịt heo xay, giò sống, nấm mèo, bún tàu, hạt nêm, đường, hạt tiêu, và hành phi.
  • Chia thành 4 phần, tạo lõm ở giữa và đặt lòng đỏ trứng muối vào.
  • Hấp nguyên liệu trong khoảng 15 phút.

Bước 3: Làm Sốt và Hoàn Thành

  • Trong chảo, phi tỏi, hành băm với dầu ăn.
  • Thêm cà chua, xào khoảng 5 phút, sau đó nêm nếm với hạt nêm, đường, nước mắm, tương ớt, tương cà.
  • Nấu sốt thêm 5 phút và thêm xíu mại đã hấp vào.
  • Cho hành và ớt cắt nhỏ vào, khuấy đều và tắt bếp.

Bước 4: Thưởng Thức
