- 1 con vịt (khoảng 1.5 – 2kg)
- 1 củ tỏi
- 1 củ hành tím
- 4 muỗng canh dầu hào
- 1/2 muỗng canh rượu nấu ăn
- 5 muỗng cà phê ngũ vị hương
- 3 muỗng canh đường mạch nha
- 1 muỗng canh dấm trắng
- 1/2 muỗng tương xay
- 1 muỗng đường
- 1/3 muỗng bột ngọt
- 1/2 muỗng muối
- 1/2 muỗng cà phê bột năng
Các bước thực hiện:
Bước 1: Sơ Chế Vịt
- Mua vịt đã được làm sạch ruột, có thể nhờ người bán làm lông.
- Ngâm vịt trong nước có thêm dấm trong 1 giờ, sau đó treo để ráo nước.
Bước 2: Ướp Vịt
- Trộn 4 muỗng canh dầu hào, 1/2 muỗng canh rượu nấu ăn, và 1.5 muỗng cà phê ngũ vị hương. Phết hỗn hợp này đều vào bụng vịt.
- Trộn 3 muỗng canh đường mạch nha với nước nóng, thêm dấm trắng. Phết hỗn hợp này lên bề mặt da vịt.
- Treo vịt ở nơi khô ráo và thoáng mát trong khoảng 5-6 tiếng.
Bước 3: Nướng Vịt
- Hâm nóng lò ở 180 độ C.
- Cho vịt vào nướng trong 15 phút, sau đó lật vịt.
- Hạ nhiệt độ lò xuống 120 độ C, tiếp tục nướng trong 40 phút (hoặc thêm 10 phút nếu vịt nặng hơn).
Bước 4: Xối Dầu Vịt
- Đun nóng dầu ăn, rưới nóng dầu lên da vịt để tạo độ giòn vàng.
- Treo vịt để ráo dầu, sau đó thái thành từng miếng nhỏ.
Bước 5: Pha Nước Chấm
- Pha nước lọc với tương xay, đường, bột ngọt, và muối.
