Công Thức 1: Phá Lấu Vịt Đậm Đà

Nguyên Liệu (Cho 4 Người):

  • Thịt vịt 500g (đầu/cổ/cánh tùy chọn)
  • Nước dừa tươi 1.5 lít
  • Giấm 2 muỗng canh
  • Gừng 1 củ
  • Hành tím 2 muỗng canh (băm nhuyễn)
  • Hành lá 1 nhánh (cắt nhỏ)
  • Ớt 1 trái (cắt nhỏ)
  • Tỏi 2 muỗng canh (băm nhuyễn)
  • Sả 2 tép
  • Ngũ vị hương 1/2 muỗng cà phê
  • Cà ri dầu 1/2 muỗng canh
  • Dầu màu điều 3 muỗng canh
  • Dầu ăn 4 muỗng canh
  • Nước tương 2 muỗng canh (Xì dầu)
  • Gia vị thông dụng (đường/hạt nêm/bột ngọt)

Cách Chế Biến:

Bước 1: Sơ Chế Thịt Vịt:

    • Chà xát thịt vịt với hỗn hợp giấm và gừng, sau đó rửa sạch và chặt khúc vừa ăn.
    • Ướp thịt vịt với gia vị: 1/2 muỗng cà phê ngũ vị hương, 1/2 muỗng canh cà ri dầu, 2 muỗng canh đường, 1 muỗng canh hạt nêm, 2 muỗng canh nước tương, 1/2 muỗng canh bột ngọt. Trộn đều và ướp trong 15 phút.
    • Chiên thịt vịt khoảng 5-10 phút trên lửa nhỏ.

Bước 2: Nấu Phá Lấu:

    • Xào hành tỏi, gừng, sả trong dầu màu điều.
    • Tiếp đến, thêm thịt vịt đã chiên vào chảo.
    • Đổ nước dừa tươi, nấu khoảng 40 phút cho thịt vịt mềm.
    • Cuối cùng nêm nếm gia vị sao cho hợp khẩu vị.

Mách Nhỏ:

    • Nếu muốn nước dùng sền sệt, có thể nấu lâu hơn.
    • Nếu muốn hương vị thêm phức tạp, thêm 200ml nước cốt dừa vào nấu.

Thành Phẩm:

    • Cho phá lấu vịt ra tô, rắc hành lá và ớt cắt nhỏ lên trên là hoàn thành.

Công Thức 2: Phá Lấu Vịt Hương Dừa

Nguyên Liệu (Cho 4 Người):

  • Thịt vịt 1.5 kg
  • Nước dừa 600 ml
  • Nước cốt dừa dão 400 ml
  • Riềng 1 củ
  • Gừng 1 củ
  • Tỏi 5 tép
  • Hành tím 5 củ
  • Quế 1 nhánh
  • Hoa hồi 2 cái
  • Bột cà ri 1 thìa cà phê
  • Bột nghệ 1 thìa cà phê
  • Ngũ vị hương 1/4 thìa cà phê
  • Dầu điều 2 thìa canh
  • Gia vị thông dụng (muối/đường/bột ngọt)

Cách Chế Biến:

Bước 1: Sơ chế thịt vịt:

    • Rửa sạch vịt sau khi nhổ lông, chà xát với rượu trắng, gừng, muối, và chanh.
    • Ướp vịt với bột cà ri, bột nghệ, đường, muối, bột ngọt, hành tỏi băm, dầu điều. Ướp trong khoảng 30 phút.

Bước 2: Sơ chế nguyên liệu còn lại:

    • Băm nhuyễn hành tím và tỏi.
    • Đập dập gừng và riềng.

Bước 3: Xào thịt vịt:

    • Đun nóng quế và hoa hồi trong chảo, thêm dầu ăn.
    • Phi thơm hành tỏi băm, gừng, và riềng.
    • Kế đến, cho thịt vịt vào xào cho thịt săn lại.

Bước 4: Nấu nước phá lấu:

    • Thêm nước dừa, nước cốt dừa dão, hoa hồi, quế vào nấu.
    • Nấu khoảng 30 phút cho thịt mềm và nước cạn xuống một phần.

Mách Nhỏ:

    • Trở đều thịt vịt trong quá trình nấu để thịt hấp thụ hương vị đều.
    • Chấm kèm với nước mắm gừng chua ngọt hoặc muối tiêu chanh.

Thành Phẩm:

    • Cho thịt vịt ra dĩa, ăn kèm bánh mì và nước mắm gừng chua ngọt hoặc muối tiêu chanh.
