Nguyên liệu
- 1kg ốc bươu
- 400g xương heo
- 150g mọc (giò sống)
- 2 miếng tàu hũ
- 3 quả cà chua
- 500g bún tươi
- Hành tím băm, tỏi băm
- Rau ăn kèm: hành lá, giá, rau muống bào, ngò gai, tía tô
- Gia vị: muối, đường, hạt nêm, nước mắm, giấm, màu dầu điều, tiêu, dầu ăn
Các bước thực hiện
Bước 1: Sơ Chế Nguyên Liệu
- Ngâm ốc trong nước vo gạo hoặc nước sạch qua đêm hoặc khoảng 6 tiếng để ốc nhả ra chất bẩn. Sau đó, rửa sạch ốc với nước.
- Rửa sạch xương heo với nước và muối, trụng qua nước sôi để xương săn lại.
- Cắt cà chua thành múi cau, tàu hủ thành miếng vuông. Chuẩn bị hành tím băm và tỏi băm.
Bước 2: Chuẩn Bị Thịt Ốc
- Đun sôi 1,5l nước, cho xương heo đã trụng vào nấu nước dùng. Nêm gia vị theo khẩu vị cá nhân.
- Luộc ốc bươu trong nước sôi khoảng 2 phút, rồi rửa sạch và cắt nhỏ nửa phần ốc để làm chả ốc. Phần còn lại giữ nguyên.
- Trộn phần ốc cắt nhỏ với mọc, gia vị, và dầu điều. Tạo hình thành viên chả ốc. Phần ốc còn lại ướp gia vị.
Bước 3: Nấu Món Bún Ốc
- Chiên vàng tàu hủ, sau đó chiên chả ốc cho chín vàng. Vớt ra để riêng.
- Xào hành tỏi băm với màu dầu điều, thêm cà chua và hạt nêm. Xào cho cà chua chín.
- Cho cà chua xào vào nước dùng đang ninh cùng tàu hủ chiên. Nêm gia vị, thêm giấm. Đun thêm 5 phút.
- Xào thịt ốc với hành tỏi băm cho thơm và giòn.
Thưởng thức
- Cho bún và rau vào tô, rưới nước dùng nóng.
- Thêm chả ốc và thịt ốc xào lên trên bún.
- Thưởng thức bún ốc nóng hổi cùng với sate hoặc mắm tôm.
Bí Quyết:
- Chọn ốc tươi ngon và không bị tanh.
- Sơ chế kỹ xương để nước dùng ngon.
- Xào thịt ốc nhanh chóng để giữ độ giòn và ngon miệng.
- Thêm sate hoặc mắm tôm để tăng hương vị.
